Soup Sunday: Okra Stew

I am a woman blessed with a man who is very easy to please when it comes to meals. Being content and thankful for whatever dish I place before him, Darling Husbie rarely makes any requests. So, when he does, I sit up and take notes.
One said request has been for Okra Stew ~ not something I’d have ever placed money on Husbie even liking, let alone enjoying it so much that he would ‘place an order’ for it. I’d never heard of it before, but if Husbie wants some Okra Stew, Okra Stew Husbie shall have.
A few quick Google searches left me bewildered with all the different varieties and variations there were for this stew. That’s great, because that told me Okra Stew is something you can pretty much toss anything into a pot and call it done ~ my kind of dinner!
I’ve tried a couple of my own experiments with Okra Stew, and since the world is deprived of having a full google of recipes to choose from, I thought I’d add one more. This is the one that Husbie has claimed as ‘the one.’ But, bear with me. Being a casserole girl, I tend to measure things by handfuls, shakes and until-it-looks-rights. I will do my best to estimate somewhat accurate amounts, but remember, this is Okra Stew and, therefore, there is a given license to go with what looks and sounds good!
Okra Stew
- 1 – 2 lbs Fresh Okra; sliced
- 4 – 5 medium Tomatoes; diced
- 2 – 3 Hot Peppers; diced
- 2 cups Whole Kernel Corn
- 1 cup Jasmine Rice
- 1 lb Ground Beef; browned
- 8 cups Water
- 2 cubes Beef Bouillon
- Salt and Pepper to taste
Wash fresh okra pods and remove stems (this is a great opportunity to use up some of the larger pods); slice into approximately 1″ pieces. Place in large stainless steel stock pot.
Add tomatoes, peppers, corn, water, bouillon cubes and salt and pepper to taste; bring to a boil. Reduce heat. Add rice; stir well.
Meanwhile, brown ground beef in skillet; drain; add to other ingredients. Stir. Cover and simmer on low heat for about an hour. Take a little sample taste and add seasonings, if desired.
