Can you believe this is the last full week of May already?! My socks, where has the time flown? We’ve got a busy schedule this week, so I’m all about quick and easy.
Monday ~ Green Chile Chicken and Rice Goop
Tuesday ~ Sloppy Joes; Homemade Potato Salad; Corn on the Cob; Pickled Okra
Wednesday ~ Blackeye Pea Soup; Cornbread
Thursday ~ Grilled Cheese Sandwich; Tossed Salad
Friday ~ Chicken Caesar Salad
Saturday ~ Spinach Lasagna Roll-Ups; Steamed Broccoli; Garlic Bread
Sunday ~ Albandigas Soup; Flour Tortillas
I made some Pineapple Lofthouse cookies the other day. They were too good. I haven’t decided what else to make for this week. Something ‘chocolately’ sounds good, though! Donuts sound good. Hmmm…chocolate donuts? Perhaps.

Can I come to your house??? Most of that is too hot to cook here… At supper it was down to 100 degrees.
Our meals are more like tuna salad and such!

You sure can, Mel! It’s such a light and plain menu this week. Tomorrow, we’ll be back down in the 60′s, so some soup and cornbread will be good! I remember the days ~ and nights ~ of cooling down to 100. It would take me some time to get used to that again after becoming acclimated to these Nebraska winters!

Hi! Well, as usual, your food sounds good…again…another question? What is Albandigas Soup? I made the Goop on Sunday and if I may so…it turned out pretty good for my first try. I ended up with two large casserole dishes! The gal from up the hill ate some and I told Uncle Dudley there was lots if they wanted some. It’s raining !@@#$#% here for two days and about 50…not nice at all! Sure wish Mel would send a little bit of that warm weather North! Till soon…I love you all!
Mom, I’m glad to hear your Goop turned out. Heehee! It’s hard to make a bad batch of goop. You must have added a lot of ‘extras’ if you ended up with two dishes ~ either that, or your dishes were small!
We’ve had rain and severe thunderstorms for about a week now, with the exception of yesterday. It was absolutely gorgeous, and I spent the entire day outdoors mowing and weed eating.
I’m sure Mel would gladly share some of her heat with you, if you could just bottle up some of that cooler weather and send it her way. I’d say you two should meet somewhere in the middle ~ that would put you right about…at the Farmstead! Heehee!
