Our Daily Bread: 28 March ~ 03 April

I can’t believe I just typed that ~ April. How did that happen? Anyway, I did pretty well with sticking to the menu last week. There weren’t too many unscheduled interruptions, with the exception of grocery shopping later in the week than I’d planned, so I swapped Wednesday and Friday around.
I made the banana strawberry cupcakes, and they turned out fabulously! Even better, the final product was more like a muffin than a cupcake. So, I forewent the frosting. Less calories. Yay! Just mix together a banana cake mix, three cups pureed frozen strawberries and three eggs; pour into cupcake pans and bake at 350 ° F for 20 minutes. Viola! They melt in your mouth.
For this week, we’ve got the following in the making:
Monday ~ Fiesta Chicken and Rice; Sweet Corn; Tortillas
Tuesday ~ Coney Island Chili Dogs; Spicy Potato Bites; Carrot and Celery Sticks
Wednesday ~ Pork Roast; Baked Potatoes; Creamed Peas; Garlic Biscuits
Thursday ~ Lo Mein; Egg Rolls; Mandarin Pineapple Salad
Friday ~ Chicken Lasagna; Corn on the Cob; Dinner Rolls
Saturday ~ Bean and Rice Burritos; Tossed Salad
Sunday ~ Potato Soup; Garlic Bread
Boy! Did I ever struggle coming up with that menu. It’s the last week of the month, and it never fails. Nothing ever sounds good. I hope I can stick to the plan!
I’m going to try to come up with something creative for dessert using pureed carrots ~ I need to clear more space in the freezer. In the past weeks, I’ve used zucchini, boston morrow squash and strawberries. It’s time to do something with carrots. Any suggestions?

Wow …your menu sounds awesome! Are you thinking south or really south of the border? I can only imagine when your Uncle Dudley gets there…he already has a belly…but he will be too miserable to get any work done! He is getting anxious! Are you going to “build” a garden this year? Your weather forecast sounds better than ours…windy and chilly today…well better change my fishies water…can’t see them anymore in their sludge water…I love you!
I thought of carrot cake, but I’m hoping to find something…different. I don’t know. Like some kind of smoothie where no one knows what the secret ingredient is and thinks it tastes great. Kind of like my Tomato Soup Cake. Heehee! I’ll be sure to let you know if I come up with something!
Mom, my Uncle Dudley couldn’t possibly be as excited as we are! We can’t stop talking about it, nor can we stop praising God for His blessing through Uncle Dudley. I will joyfully feed him all the treats he wants!
The garden has been a central discussion point around here. We have decided that, in light of current events, we will be down-scaling back to the small 19′ x 40′ plot plus a little bit here and there. The other 22,000 sf plots are going back to grass.
We haven’t seen the sun since last Thursday. I’m ready for a break in the snow and freezing rain. It looks like it should warm up a little this weekend.

I forgot to ask you if you looked in the “old” black cookbook…remember all of the not heard of recipes that we found…maybe one for carrots? Well, the wind is howling about 45 mph…better hunker down! I love you!
No, I haven’t checked the old cookbook ~ forgot about it! There probably is something strange and bizarre in there…just the sort of thing I need to make. Heehee!
