Easiest Chocolate Strawberry Cake, Ever!

Remember me mentioning I have a plethora of frozen sliced strawberries in the freezer that need to be used?  Well, I also have a plethora of cake mixes [gasp!] that need used, as well.  So, I tried a little experiment last night, and the result was terrific!  At least we thought so.  So much that we delved into it so fast there was no getting a photo, unless you wanted to see a pan with crumbs in it.  And, honestly, with the way Abigail’s daddy spoils her rotten, I’m surprised there’s any crumbs left in the pan.  Perhaps it was the ‘chocolate’ that kept him from slipping her the pan to lick.

I took a box of Betty Crocker Chocolate Fudge cake mix, dumped it into a mixing bowl, and ignored all the directions.  I whirled the frozen sliced strawberries, including their natural juice, in the blender until it was a smooth consistency.  That resulted in about 3 cups of pure strawberry puree bliss.  I poured that in the bowl on top of the cake mix.  Then, I cracked in 3 farm-fresh eggs [no, not our own...we don't have any chick-chicks], and mixed it all up.  The end result was a lot like a fudge brownie mix.  I poured the mixture into a 9″ x 13″ greased baking dish and baked at 350° F for 35 minutes.

You always dip your strawberries in Cool-Whip, yes?  Even chocolate covered ones, right?  There was no whipped cream to be found in the Farmstead freezers, so I improvised and made something even better.  I mixed up a little batch of Dream Whip and added a touch of almond extract just to tickle the taste buds a little.

After 35 minutes in the oven, the cake was ever-so-slightly ooey and gooey ~ just like a wonderful batch of fudge brownies should be.  Except there was the heavenly scent of strawberries, too!  Once it cooled enough not to melt the Dream Whip, I slathered it over the top and we dove in.  It was great, and couldn’t have been simpler!

Give it a try, if you have a spare plethora of frozen strawberries and cake mixes.  I can’t wait to try it with a banana cake mix!  Swoon!

  3. I just have to say that this cake was even better the next day ~ after it had been refrigerated overnight. It is so incredibly moist, and again, who doesn’t like chocolate and strawberries?!

    But…what are you doing up at 1am, Dearie?!
