Okay, does anyone else feel like time slips by faster and faster as each week goes by? Seriously. I don’t think I’d notice it so much if Mondays didn’t happen. Monday rolls around and I have to plan the week’s menu, but I swear I just did this a couple of days ago.
I can report that I did a much better job at keeping to the task at hand last week with respect to meal preparation, albeit there were still a couple of things I didn’t make. We’ll try it again, shall we?
Monday ~ Cashew Chicken; Jasmine Rice; Sauteed Yellow Squash
Tuesday ~ Baked Eggplant with Italian Sausage; Green Beans; Garlic Biscuits
Wednesday ~ Apricot Glazed Stuffed Pork Loin; Baked Sweet Potatoes; Sweet Corn
Thursday ~ Ham Fried Rice
Friday ~ Roasted Sticky Chicken; Potato Salad; Ranch Style Beans; Tossed Salad
Saturday ~ Strawberry Pancakes; Bacon; Eggs
Sunday ~ Okra Stew; Cornbread
I found a wonderful recipe for Pumpkin Bread I will share later this week. I used some of the pureed butternut squash I had pulled from the freezer. Simply delicioso!
This week’s desserts remain to be seen…er…determined!

Ok! We will be there for dinner on Tuesday…with the way the wind is blowing…it won’t take long to get there! We can make some, as you call, Bierock, I know now what you are talking about! I love you!
J, I can’t remember (and I’m lazy) – is your cashew chicken recipe posted here? And could I maybe get away with peanuts?

Just honk when you get in the driveway; the doorbell doesn’t work. I never did make the Bierock ~ change of plans that night…I think I was still laying the new tile in the laundry closet. Oy!
Hey there, Dearie! Yes, the Cashew Chicken recipe is posted here. Every time I make it, we like it more. You know how you improve a little with practice? Heehee! I think this recipe would be quite tasty with peanuts, too! I wouldn’t hesitate to make it with peanuts…or pecans…or walnuts…er…well, maybe not walnuts.
I’m making the Baked Eggplant with Italian Sausage tonight. I’m not sure how it’s going to turn out. Canned chili is Plan B in case it isn’t edible. Heehee! But, come on over ~ how much stinkin’ fun would we have?!
