We all know that menu planning is something I’ve been less than faithful in maintaining on a regular basis. So, I thought I’d better at least close out the year by setting myself a good example ~ you know, so that I can follow my own lead into the New Year.
I really want to make homemade tamales this year. Well, I should say I really want to eat homemade tamales, which equates to me making them. I’ve got all the ingredients on hand. It’s just a matter of choosing the day that best fits into the schedule. I’ve never made tamales by myself before, so it should prove rather interesting, and it could even prove to be entertaining. Then, there’s the slight chance I’ll be successful. I’ll be sure to let you know either way.
So, here we go ~ and the pressure’s on, too. Darling Husbie is going to be keeping a keen eye on the menu to see that I don’t slack off disappoint myself…since I’m setting myself an example and all.
Monday ~ Oven Fried Chicken; Seasoned Potato Wedges; Sweet Corn; Pickled Okra; Cheesy Garlic Drop Biscuits
Tuesday ~ Shepard’s Pie; Tossed Salad
Wednesday ~ Ham Steaks; Baked Cheese & Vegetable Twist
Thursday ~ Tamale Making Day! If they turn out edible, I’ll serve some up with Spanish Rice and a nice Tossed Salad. If they flop? Well, I’ll pick them apart and make some sort of Goop [aka, casserole].
Friday ~ Green Chili Stuffed Chicken Breasts; Hominy; Refried Beans; Tortillas
Saturday ~ Cheeseburgers; Sweet Potato Fries (or Bites); Blackeye Peas with Bacon; Lettuce, Tomato and Onion
Sunday ~ Pancakes; Sausage; Eggs; Cherry Pie!
Homemade cherry pie counts as a fruit serving, right?! I guess this will force me into finally getting those cherries I picked during the summer made into pie filling, yes? Husbie’s been waiting since June ~ I’m so thankful he is such a patient man! [tee hee!]
But, since we won’t be having the pie until Sunday, I’m thinking I should probably come up with something else for a little sweet snack in the interim. I made cookies, fudge and spiced nuts for the days leading up to Christmas ~ something different would be nice. I know! I’ll make V-Dub’s Mexican Fruit Cake! That should fit in well with the Mexican theme we seem to have going this week.
I’ll need to go back over this a little later to make the shopping list, but there shouldn’t be too much I’ll need to pick up. I will need to get some hominy…and some more tortillas if I can’t keep Little Big Brother out of them until Friday.
