Cashew Chicken

I am working on revamping our menu plan a little here at the Farmstead. We really enjoy Chinese food, so I decided I’d get adventurous and expand beyond our traditional Beef and Chicken Stir Fry dishes. [Whoa! Wild woman in the house!] I found a Cashew Chicken recipe that fit my cooking criteria ~ simple ingredients and quick to make. I decided to give it a whirl last week. The results? Darling Husbie said, and I quote, “I’d do almost anything to get some more of this.” That comment immediately put this recipe on the keeper list and on the 5-week rotation menu [the one I'm working on revamping].
If you like Cashew Chicken, give this recipe a try. It just seemed so much easier than a lot of the other recipes I saw, and it came together really quickly. If you don’t like Cashew Chicken, give this recipe a try, because it will make you change your mind. It’s just that good!
Cashew Chicken
2 tablespoons Vegetable Oil (I used EVOO) [Listen to me all soundin' like Rachel Ray!]
1 cup Celery; sliced
1/4 cup Onion; sliced
1/2 lb Mushrooms; sliced (I used a 4 oz can)
1 can Water Chestnuts; sliced
2 cups Chicken Breast; diced
1/2 cup Cashews
1 tablespoon Cornstarch
1/4 cup Soy Sauce
3/4 cup Water; cold
Mix cornstarch, soy sauce and cold water. Set aside.
Heat oil in wok or large skillet. Add chicken; cook until just turning white on the outside. Add celery and onion; cook until chicken juices are clear and vegetables are tender.
Pour sauce mixture into chicken and vegetables. Heat to boiling. Add mushrooms and water chestnuts. When thoroughly heated, add cashews.
Serve over white or wild rice.
That’s it! It really couldn’t be simpler. We had it over Jasmine Rice. I do think it would be good over wild rice, or brown rice, too. This stuff would be good over biscuits, even. But, then, it probably wouldn’t be Chinese anymore. Be sure to let me know if you try this recipe, and if you have any suggestions on how to improve on this already delicious meal!

Looks yummy… However when i read the title on my blog list, I read it as either cashex children or cashier children…. Guess my brain is still off line…

Oh, Dearest Mel! Please do get some more rest. I know as soon as you start to feel better, you immediately kick into overdrive and run yourself down again.
At least you didn’t see Cashew Children ~ I wouldn’t want you to think we are servin’ up children for dinner here at the Farmstead!
