Eat From Your Pantry Challenge: Week Two

Although we ate the majority of our dinner meals from things we already had in the pantry and freezer, I have to report that we did fall off the challenge wagon one evening because of lack of better planning on my part. While I’m feeling like I’ve failed because of that, I’m trying to remind myself that we’re still doing rather well in keeping the grocery budget to a minimum this month.
I veered away from the planned menu a little again this week, too. Here’s what we ended up serving at the Farmstead:
Monday: French Toast Casserole; Sausage Patties ~ all of the ingredients were from the pantry and freezer; the ‘toast’ was made from a loaf of homemade French bread we weren’t otherwise going to get through.
Tuesday: Beef and Noodle Casserole ~ all of the ingredients were from the pantry and freezer; I was able to use up two cans of Campbell’s Tomato Soup I’d ‘found’ while moving the pantry location a couple of weeks ago.
Wednesday: Beef Roast; Mashed Potatoes; Sweet Peas ~ all of the ingredients were from the pantry and freezer; the potatoes and peas were compliments of last summer’s garden.
Thursday: C.O.R.N. (Clean Out Refrigerator Night) ~ we had leftover Beef and Noodle Casserole and leftover Beef Roast and Mashed Potatoes that needed to be eaten; it worked out rather well since neither Darling Husbie’s nor my ‘scheduled’ plans went the way they were supposed to.
Friday: Whoops! I fell off the challenge wagon. I ended up being away from home all morning and afternoon ~ didn’t intend to be gone that long ~ and then made an unexpected run into town with Darling Husbie in the evening to purchase some materials to proceed with our Operation: Pantry project in the OSB Palace. We ended up picking up some Sonic burgers. Gack!
Saturday: Chicken and Rice Bake; Tossed Salad ~ all of the ingredients were from the pantry and freezer; not the intended meal of homemade pizza ~ yet again, evening plans changed ~ but at least I was able to recover without having to rely on asking Husbie to stop and pick up gut-bomb burgers!
Sunday: Potato Gnocchi and Chicken Soup ~ all of the ingredients will be from the pantry and freezer; the potatoes are compliments of last summer’s garden, and I will use the little tad of leftover mashed potatoes as a thickener. The timing of this soup is perfect ~ I peeked into the potato bin yesterday and there were some potatoes peeking back at me!
