Garden Bounty: Farmstead Broccoli Salad

Our broccoli babies are growing quite nicely!  The main broccoli heads are large enough to harvest, and the plants are becoming loaded with the smaller secondary broccoli ‘shoots.’

We harvested our first two heads Thursday morning ~ amounting to just over a pound ~ and oh, how delicious it was!  Broccoli purchased from the store seems to have a somewhat bitter flavor.  Not this.  This was nothing but pure freshness.

With the summer nights being quite warm, I was wanting a cold veggie side dish to serve with dinner.  After a few ‘Google’ attempts, I still hadn’t found the perfect recipe to compliment our savory broccoli babies.  So, I decided the best thing to do would be to take a little of this and a little of that from the recipes that looked good to make the perfect salad.  The result was absolutely scrumptious, so I thought I’d share it with you.

Farmstead Broccoli Salad

  • 6 cups small broccoli florets
  • 1/2 cup chopped red onion
  • 1-1/2 cups frozen peas – thawed
  • 1/2 cup almonds – chopped or sliced
  • 2/3 cup mayonnaise
  • 1/4 cup honey
  • 1 tablespoon lemon juice

In a medium bowl, combine first three ingredients.

In a small bowl, combine mayonnaise, honey and lemon juice.  Pour over broccoli mixture, tossing gently to coat.  Chill.  Stir in chopped or sliced almonds just before serving.  Enjoy!

These broccoli babies are so good and were so easy to grow, we will definitely be planting a fall crop!
