My Heart’s Aflutter Over Apple Butter

In addition to the Apple Pies, I figure another thing I can make which utilizes a lot of apples is Apple Butter. I haven’t had Apple Butter in ages and until today, I’d almost forgotten how much I like it.
I’ve decided to use a crockpot recipe to make our Apple Butter. I know the process will take longer than if I were to do it in a stockpot on the stove, but the crockpot will allow me time to continue peeling, coring and slicing more of those 137 lbs of apples for other goodies.
I found a recipe over at A Year of Crockpotting that had great reviews. I took Stephanie’s suggestion and adapted the recipe she had originally used by cutting back on the sugar. Because of the Nebraska Time Warp, I started fairly late in the day yesterday and the process carried over to today. The aroma was out of this world and pure torture to the ol’ tastebuds that had to wait. Well, the waiting was worth it because the results are spectacular! I do believe this is the best Apple Butter I’ve ever tasted. Darling Husbie declared it really good, as well.
Crockpot Apple Butter
6 cups Apples (approximately); peeled, cored and sliced
1 tablespoon Vanilla
3/4 cup White Granulated Sugar
3/4 cup Brown Sugar
2 teaspoons Ground Cinnamon
1/2 teaspoon Ground Cloves
Peel, core and slice apples. Place in crockpot and add vanilla. Cover and cook on low 8 hours.
Use immersion blender or hand mixer to puree apples until creamy smooth. Add sugars, cinnamon and cloves; stir well. Cover and cook on low 6 hours.
Ladle hot apple butter into hot canning jars leaving 1/4 inch head space. Remove air bubbles and adjust two-piece lid. Process in hot water canner for 10 minutes (adjust for your altitude).
Makes 3 pints ~ unless you start taste testing before the final cooking stage is complete…then you may only end up with 2-1/2 pints.
